Ingredients:
1/2 cup egg white 10g P
2 medium eggs 2g C 12g P 10g F
3 TBS almond oil (in olive oil section) 42g F
1 - 15oz can canned pumpkin (not pie mix) 28.5g C 7g P
1 TBS baking powder
1/2 cup oat flour 24g C 6g P 3g F
1/8 tsp salt
98g vanilla protein powder 4g C 100g P
1 TBS pumplin pie spice
4 TBS liquid fructose 62g C
1/4 cup whole wheat flour 23g C 4g P .5g F
3/4 cup sliced almonds 45gF
Instructions:
Preheat oven 375. Mix wet ingredients well and combine with dry ingedients until lightly mixed. Pour into 18 muffin tins and bake for 15 minutes. Note: Best when not overmixed or overbaked!
Makes 18 2-block muffins by my calculations. Carbs = 17, Protein = 14, Fat = 6.
